I fell in love with these Coconut Matcha Energy Balls at first bite. They are so simple to make and a delicious and healthy way to add some sweetness to your day. Enjoy these mouthful sized treats for a morning or afternoon snack or even as dessert. In particular, I have been loving them with my afternoon cup of tea; a natural cure for energy slumps or cravings for less healthy sweets. Chick peas form the base of this recipe and are a great neutral carrier for the other ingredients. Providing the beautiful, bright green colour in these energy balls is matcha tea. Matcha is a powdered form of green tea, commonly grown and processed in Japan. It’s high in antioxidants, amino acids, and chlorophyll. The caffeine in matcha tea is balanced with amino acid L-theanine, which has a calming effect on the mind and body. Together, L-theanine provides relaxation and the caffeine creates focus; the ying and the yang. You’ll notice the wonderful earthy flavour provided by the matcha tea.

Easy to make Coconut Matcha Energy Balls with walnuts, dates, chickpeas, coconut, matcha & more! A healthy snack or dessert for any time of day!
1 cup (250 ml) walnuts, soaked
¼ cup (60 ml) dates, packed
1 cup (250 ml) canned chick peas
1 cup (250 ml) shredded unsweetened coconut, divided
1-2 tbsp (15-30ml) maple syrup (sweeten to taste)
1 tsp (5 ml) vanilla
3 tbs (45 ml) coconut oil, liquid
¼ tsp (1 ml) sea salt
2 tbsp (30 ml) matcha powder
- In just boiled water, soak dates and walnuts in a bowl for 15 minutes, while preparing other ingredients.
- Combine soaked dates and walnuts, chick peas, ½ cup (125 ml) coconut, maple syrup, vanilla, coconut oil, salt, and matcha powder in food processor.
- Blend until mixture forms a dough consistency.
- Make balls, about 2 tbsp (30 ml) and roll in remaining ½ cup (125 ml) coconut flakes until covered.
- Serve chilled.
Special Equipment: Food processor.
Make Ahead and Timing: Can be stored in the refrigerator for several days, or frozen for use at a later date. If frozen, thaw in the refrigerator for a few hours before serving.
