Banana Oat Chocolate Chip Muffins

Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 cup oat bran
  • ½ cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup almond milk (or milk of choice)
  • ¼ cup butter, melted
  • 1 egg
  • 1 tsp vanilla
  • 2 ripe bananas, mashed
  • ½ cup walnuts, chopped
  • ½ cup chocolate chips
  • Optional topping: chopped walnuts, rolled oats, fresh banana slice

Instructions

  1.  Preheat oven to 400 ℉. Grease a muffin tin, or line with paper cups.
  2. Combine flour, oat bran, sugar, baking powder and salt in a large bowl.
  3. Combine milk, melted butter, egg and vanilla in a medium bowl.  Whisk to combine.
  4. Add liquid mixture to dry ingredients.  Stir just until combined (don’t over mix as this will result in a tough muffin).
  5. Add mashed bananas, walnuts and chocolate chips to batter.  Stir briefly, just until distributed.
  6. If desired, sprinkle tops with rolled oats, chopped walnuts or extra chocolate chips.
  7. Bake in preheated oven until toothpick inserted in centre comes out clean, about 20 minutes.
  8. Let muffins cool in pan for about 10 minutes.  Then transfer to a wire rack to cool.  Serve warm or at room temperature.
