If I could eat my weight in watermelon everyday, I probably would. In the summer it’s not uncommon for me to slice a big juicy watermelon in half, grab a spoon, and go to watermelon heaven…one delicious spoonful at a time.

I was so excited to buy my first watermelon for the year a few weeks ago, but when I cut into it, it was so dry that I could have cried. Ugh. Obviously, I tried again this week, and to my delight this one was perfect! Super juicy and crisp…which made me very happy! Tip: when choosing a watermelon, find ones that are heavier for their size. This means that there is higher water content and it is more ripe.

Anyways, with a lot of watermelon on my hands, I have been adding it to my go-to smoothie. There was snow on the ground yesterday, but sipping on this blend of tropical fruit, lime, mint, ginger and avocado made me feel like I could taste summer!

But this smoothie isn’t just about it’s sweet refreshing taste or pretending summer is here…it brings some serious and powerful nutrition to the table as well. To name just a few of the benefits of some of the ingredients…

Watermelon: A rich source of vitamin A and lycopene, which has been studied extensively for its antioxidant and anti-inflammatory compounds.
Pineapple: High in vitamin C & manganese and has a helpful digestive enzyme called bromelain.
Ginger: Great for stimulating and aiding in digestion and has anti-inflammatory compounds.
Avocado: Loaded with vitamin E, healthy fats and antioxidants.

Together, you have a skin loving, heart healthy, digestion friendly, inflammation fighting, great tasting smoothie at your finger tips! And hey, if you don’t love watermelon as much as I do, or you haven’t purchased your first melon for the year yet, simply add a banana instead. It’s quite creamy and dreamy this way as well.

Green Tropic Smoothie

Servings: 1
Prep/Cook Time: 5-10 minutes

INGREDIENTS

1 cup (250 ml) spinach
1 tbsp (15 ml) mint, packed
1 inch (2.5 cm) cucumber
1/2 cup (125 ml)  pineapple, fresh or frozen
1 cup (250 ml) watermelon flesh (or 1 small banana)
1/4 avocado
1 tsp (5 ml) ginger (adjust to taste)
Juice of 1 lime (or lemon)
1/2 cup (125 ml) water (adjust to desired consistency)
2 ice cubes, optional

 INSTRUCTIONS

Simply blend all ingredients together in a high speed blender and enjoy!
