A couple of months ago my girlfriends and I spent a wonderful evening around the fire drinking margaritas and eating tacos for a little Cinco de Mayo fiesta. Although this occurred back in May, I couldn’t resist sharing the photos and providing some outdoor cooking and summer cocktail inspiration!

While I can’t say the margaritas were “authentic” they certainly hit the spot. The first batch was a blend of fresh yellow mango, lots of lime juice, some fresh jalapeño, a small amount of simple syrup, and ice and water until I reached the consistency I wanted. The second batch of margs was a definite crowd pleaser… how could it not be with watermelon in the mix?! In my blender I combined about 3 cups watermelon, a handful of mint, juice of about 2 limes and 2 lemons, ¼ cup simple syrup, and about 1 cup of tequila. Either blend with ice or serve over ice cubes. This is not an exact science so taste test until you reach the perfect sweetness and/or tartness! And if you don’t like getting on the tequila train, then I would recommend using vodka or you can always keep them virgin too.

Of course there was plenty of mouthwatering food to accompany these refreshing bevy’s. We stuffed homemade tortillas grilled over the fire with slow cooked seasoned beef, melted oaxaco cheese, a veggie slaw with a creamy avocado dressing and topped them with a fresh tomato salsa and gaucamole. Dessert was creme caramel which officially put us in a fully content food coma! It was perfect!
